For the Longhorn Garlic Parmesan Crusted Chicken:

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup Panko breadcrumbs

  • 2 teaspoons garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon dried Italian seasoning

  • Salt and pepper, to taste

  • 1/4 cup fresh parsley, chopped (for garnish)

  • 2 tablespoons olive oil

  • 1/4 cup unsalted butter, melted

  • 1/2 cup shredded mozzarella cheese


Instructions

1. Prepare the Chicken Breasts

Start by prepping the chicken breasts. If the chicken breasts are very thick, consider slicing them in half horizontally to create thinner, more even pieces that will cook more quickly. Use a meat mallet or rolling pin to gently pound the chicken to an even thickness if necessary.

Once the chicken breasts are prepared, pat them dry with paper towels. This will help the coating adhere better to the chicken. Season both sides with salt and pepper.

2. Make the Garlic Parmesan Crust

In a shallow dish or plate, combine the grated Parmesan cheese, Panko breadcrumbs, garlic powder, onion powder, and dried Italian seasoning. Stir everything together until well combined. The Panko breadcrumbs will provide a crunchy texture to the crust, while the Parmesan will give the crust its signature cheesy flavor.

In a separate shallow dish, melt the butter in the microwave or on the stovetop. Once melted, stir in the olive oil to create a smooth mixture.

3. Coat the Chicken

Dip each chicken breast into the butter and olive oil mixture, ensuring both sides are evenly coated. Then, press the chicken into the garlic Parmesan breadcrumb mixture, making sure the chicken is fully coated on both sides with the breadcrumb mixture. Gently press the breadcrumbs into the chicken to ensure a thick, even coating.

4. Bake the Chicken

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray to prevent sticking.

Place the coated chicken breasts on the prepared baking sheet. Arrange the chicken so that the pieces aren’t touching each other to allow for even cooking. Bake the chicken for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) when measured with a meat thermometer.

5. Add Mozzarella Cheese (Optional)

After the chicken is cooked through, sprinkle the shredded mozzarella cheese evenly over the top of each chicken breast. Return the chicken to the oven for an additional 3-5 minutes, or until the cheese is melted and bubbly. This step adds an extra layer of flavor and richness to the dish, making it even more decadent.

6. Garnish and Serve

Once the chicken is cooked and the cheese is melted, remove the chicken from the oven. Garnish with freshly chopped parsley for a pop of color and freshness.
