Ingredients

Scale

For the Crust:

  • 1 cup graham cracker crumbs (or digestive biscuit crumbs)
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon cinnamon (optional)
  • 1/4 cup unsalted butter, melted

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1/2 cup sour cream
  • 1 tablespoon fresh lime juice (optional, but adds a lovely citrusy note)

For the Mango Layer:

  • 2 ripe mangoes, peeled, pitted, and chopped into cubes
  • 1 tablespoon honey or agave syrup (optional, depending on the sweetness of the mango)
  • 1 tablespoon fresh lime juice (to enhance the flavor)

Instructions

Step 1: Prepare the Graham Cracker Crust

The first step is to make the graham cracker crust, which will form the base of your dessert cups. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and cinnamon (if using). Add the melted butter and mix everything together until the crumbs are well-coated and the mixture holds together when pressed.

Spoon about 2 tablespoons of the crust mixture into the bottom of each serving cup or small jar. Use the back of a spoon or your fingers to press the mixture down firmly to create an even, compact crust. Place the cups in the refrigerator to chill while you prepare the cheesecake filling.

Step 2: Make the Cheesecake Filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the powdered sugar and vanilla extract, and continue to beat until well combined.

Next, add the heavy cream and sour cream to the mixture. Beat on medium speed until the filling becomes light and fluffy, about 2-3 minutes. If desired, stir in the fresh lime juice for a subtle citrus flavor that complements the mango. Taste the filling, and adjust sweetness if necessary by adding a little more powdered sugar.

Once the cheesecake filling is smooth and creamy, remove the crust-filled cups from the fridge. Spoon the cheesecake mixture into each cup, dividing it evenly among them. Use the back of a spoon or an offset spatula to smooth the top of each layer.

Step 3: Prepare the Mango Layer

To make the mango layer, place the chopped mango into a blender or food processor. Add the honey (if using) and lime juice. Blend until the mango forms a smooth puree. If the mixture is too thick, you can add a small amount of water to reach the desired consistency.

Once the mango puree is ready, spoon it on top of the cheesecake layer in each cup. Be generous with the mango puree for a lovely, colorful finish. You can also swirl the mango into the cheesecake filling if you want a more marbled effect.

Step 4: Chill the Dessert

Cover each dessert cup with plastic wrap or a lid and refrigerate for at least 3 hours, or overnight if you prefer. This chilling time allows the cheesecake to firm up and the flavors to meld together. If you like, you can garnish the desserts with extra mango slices, fresh mint leaves, or a dollop of whipped cream before serving.
