Description

This tropical-inspired drink blends the sweetness of ripe mangoes with the creamy richness of coconut milk, creating a refreshing and smooth lassi. Perfect for a cool treat or as a flavorful accompaniment to any meal, this drink is a creamy burst of sunshine in every sip.

Ingredients

Scale

For the Mango Coconut Lassi:

  • 1 cup ripe mango, peeled and chopped (fresh or frozen)
  • 1 cup coconut milk (canned or carton, depending on your preference)
  • ½ cup plain yogurt (Greek yogurt for a thicker consistency or regular yogurt)
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • ½ teaspoon ground cardamom (optional, for extra flavor)
  • 1 tablespoon shredded coconut (optional, for garnish)
  • Ice cubes (optional, for a colder, thicker consistency)
  • Optional: A pinch of salt (to enhance sweetness)

Instructions

1. Prepare the Mango

Start by peeling and chopping the ripe mango into small chunks. If you’re using frozen mango, there’s no need to peel it beforehand, as frozen mangoes are typically pre-peeled. Make sure the mango is ripe for the best natural sweetness and rich flavor.

2. Blend the Mango with Coconut Milk

Place the chopped mango into a blender. Add the coconut milk to the blender as well. If you’re using canned coconut milk, you can choose whether to use the thicker coconut cream or the more liquid coconut milk, depending on your preference for consistency. For a creamier drink, coconut cream is a great choice, but if you prefer a lighter consistency, opt for coconut milk.

3. Add Yogurt and Sweetener

Add the yogurt to the blender, and for sweetness, drizzle in the honey or maple syrup. The sweetener can be adjusted depending on your taste preference. If you prefer a naturally sweet lassi, you can also increase the amount of mango or use a riper mango to reduce the need for added sugar.

4. Optional Additions for Flavor

For an extra layer of flavor, add ½ teaspoon of ground cardamom. Cardamom adds a warm, aromatic touch to the lassi, complementing the tropical mango and coconut flavors. If you’d like more texture, you can add a tablespoon of shredded coconut. This will not only add visual appeal but also give a slightly chewy element to the drink.

5. Add Ice for Texture

If you want a chilled, thicker lassi, add a few ice cubes into the blender. This will create a frosty, smoothie-like texture that’s refreshing on a hot day.

6. Blend Until Smooth

Blend all the ingredients on high speed until the mixture is completely smooth and creamy. Make sure the mango chunks and any ice cubes are fully blended into the lassi. Depending on the consistency you desire, you can add more coconut milk or yogurt to adjust thickness. If you prefer a thinner drink, simply add more coconut milk, and if you prefer it thicker, add more yogurt or reduce the amount of coconut milk.

7. Taste and Adjust

Before serving, taste your Mango Coconut Lassi to check the flavor balance. If it needs more sweetness, add additional honey or maple syrup. If the mango flavor isn’t strong enough, you can add a little more fresh or frozen mango.

8. Serve and Garnish

Pour the mango coconut lassi into glasses. Garnish with a sprinkle of shredded coconut on top for an extra touch of tropical flair. For a visually stunning presentation, you can also add a few slices of fresh mango or a dusting of ground cardamom on top.
