Ingredients
Scale
- 1 cup old-fashioned rolled oats
- 2 1/2 cups whole milk (or any milk of your choice)
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 teaspoon ground nutmeg (optional)
Toppings (optional):
- Fresh fruit (such as berries or sliced bananas)
- Chopped nuts (such as almonds or walnuts)
- Honey or maple syrup
- Whipped cream
Instructions
- Prepare the Oats:
- In a medium saucepan, combine the rolled oats and milk. Bring to a simmer over medium heat, stirring frequently.
- Cook the Oats:
- Reduce the heat to low and cook the oats for about 5 minutes, stirring occasionally, until they are tender and have absorbed some of the milk.
- Make the Pudding Mixture:
- In a separate bowl, whisk together the granulated sugar, brown sugar, cornstarch, and salt. Gradually stir this mixture into the cooked oats.
- Thicken the Pudding:
- Continue to cook the mixture over medium heat, stirring constantly, until it begins to thicken, about 5-7 minutes. Be sure to keep stirring to prevent lumps.
- Add Flavor:
- Once the pudding has thickened to your liking, remove the saucepan from the heat. Stir in the vanilla extract, and if using, the ground cinnamon and nutmeg.
- Serve:
- Spoon the pudding into individual serving bowls or dishes. Serve warm or let it cool to room temperature before chilling in the refrigerator.
- Add Toppings:
- Before serving, add your choice of toppings such as fresh fruit, nuts, honey, or whipped cream.
