Ingredients

  • 1 cup old-fashioned rolled oats
  • 2 1/2 cups whole milk (or any milk of your choice)
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground nutmeg (optional)

Toppings (optional):

  • Fresh fruit (such as berries or sliced bananas)
  • Chopped nuts (such as almonds or walnuts)
  • Honey or maple syrup
  • Whipped cream

Instructions

  • Prepare the Oats:
    • In a medium saucepan, combine the rolled oats and milk. Bring to a simmer over medium heat, stirring frequently.
  • Cook the Oats:
    • Reduce the heat to low and cook the oats for about 5 minutes, stirring occasionally, until they are tender and have absorbed some of the milk.
  • Make the Pudding Mixture:
    • In a separate bowl, whisk together the granulated sugar, brown sugar, cornstarch, and salt. Gradually stir this mixture into the cooked oats.
  • Thicken the Pudding:
    • Continue to cook the mixture over medium heat, stirring constantly, until it begins to thicken, about 5-7 minutes. Be sure to keep stirring to prevent lumps.
  • Add Flavor:
    • Once the pudding has thickened to your liking, remove the saucepan from the heat. Stir in the vanilla extract, and if using, the ground cinnamon and nutmeg.
  • Serve:
    • Spoon the pudding into individual serving bowls or dishes. Serve warm or let it cool to room temperature before chilling in the refrigerator.
  • Add Toppings:
    • Before serving, add your choice of toppings such as fresh fruit, nuts, honey, or whipped cream.
