- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh basil (optional, for garnish)
Instructions
- Prepare the Chicken:
- Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
- Sear the Chicken:
- Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side, or until they are golden brown and cooked through. Remove from the skillet and set aside.
- Make the Sauce:
- In the same skillet, add a bit more olive oil if needed and sauté the minced garlic until fragrant, about 1 minute.
- Pour in the chicken broth and heavy cream, stirring to combine and deglaze the pan.
- Stir in the Parmesan cheese and sun-dried tomatoes, allowing the sauce to simmer and thicken for about 3-4 minutes.
- Combine and Finish:
- Return the chicken breasts to the skillet, spooning some of the sauce over the top. Reduce heat to low and let simmer for an additional 5 minutes, allowing the chicken to soak up the flavors and the sauce to thicken further.
- Add the fresh spinach and cook until wilted, about 2 minutes.
- Serve:
- Garnish with chopped fresh basil if desired and serve the chicken with the creamy sauce over pasta, rice, or alongside crusty bread.
