Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh basil (optional, for garnish)

Instructions

  • Prepare the Chicken:
    • Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  • Sear the Chicken:
    • Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side, or until they are golden brown and cooked through. Remove from the skillet and set aside.
  • Make the Sauce:
    • In the same skillet, add a bit more olive oil if needed and sauté the minced garlic until fragrant, about 1 minute.
    • Pour in the chicken broth and heavy cream, stirring to combine and deglaze the pan.
    • Stir in the Parmesan cheese and sun-dried tomatoes, allowing the sauce to simmer and thicken for about 3-4 minutes.
  • Combine and Finish:
    • Return the chicken breasts to the skillet, spooning some of the sauce over the top. Reduce heat to low and let simmer for an additional 5 minutes, allowing the chicken to soak up the flavors and the sauce to thicken further.
    • Add the fresh spinach and cook until wilted, about 2 minutes.
  • Serve:
    • Garnish with chopped fresh basil if desired and serve the chicken with the creamy sauce over pasta, rice, or alongside crusty bread.
