Ingredients

  • 1 lb white fish fillets (such as cod, tilapia, or haddock), cut into strips
  • 1 cup breadcrumbs (plain or Italian)
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 2 large eggs
  • 1 tablespoon olive oil (optional, for brushing)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  • Prepare the Breading Mixture:
    • In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, paprika, dried oregano, dried basil, salt, and pepper. Mix well.
  • Prepare the Egg Wash:
    • In another shallow dish, beat the eggs until well combined.
  • Bread the Fish Sticks:
    • Dip each fish strip into the beaten eggs, allowing any excess to drip off. Then coat it thoroughly with the breadcrumb mixture, pressing gently to adhere. Place the coated fish sticks on the prepared baking sheet.
  • Bake:
    • If desired, lightly brush the top of each fish stick with olive oil for extra crispiness.
    • Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and the coating is golden and crispy. The internal temperature of the fish should reach 145°F (63°C).
  • Serve:
    • Serve the Parmesan baked fish sticks with your favorite dipping sauce, such as tartar sauce, ketchup, or a lemon aioli. Enjoy with a side of veggies, salad, or fries.
