  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons olive oil (or cooking spray)
  • Optional: Fresh parsley or additional Parmesan cheese for garnish

Instructions

1. Prepare the Zucchini

Begin by washing the zucchinis thoroughly to remove any dirt or debris. Cut off the ends of each zucchini and slice them into fries, about 1/4-inch thick. It’s important to make sure the zucchini slices are of uniform thickness so they cook evenly. Depending on the size of your zucchini, you may want to slice them into 3-4 inch long pieces to resemble traditional fries.

Once the zucchini is sliced, pat the pieces dry with a paper towel to remove any excess moisture. This will help the breading stick better and ensure a crispier texture when baked.

2. Prepare the Breading Station

Next, set up your breading station. You’ll need three shallow dishes or bowls:

  • In the first dish, add the breadcrumbs. For extra crunch, use panko breadcrumbs, which are larger and crispier than regular breadcrumbs.
  • In the second dish, combine the grated Parmesan cheese, garlic powder, oregano, basil, salt, and black pepper. Mix well to evenly distribute the seasonings and cheese.
  • In the third dish, crack the eggs and beat them lightly with a fork or whisk until the yolks and whites are fully combined.

3. Coat the Zucchini Fries

To coat the zucchini fries, start by dipping each slice into the egg wash, ensuring it is fully coated. Let any excess egg drip off, then transfer the zucchini slice into the breadcrumb mixture. Gently press the zucchini into the breadcrumbs to ensure a thick and even coating. Repeat this process with all the zucchini slices until they are all breaded.

If you prefer an extra-crispy coating, you can double coat the zucchini fries. After the first coating of breadcrumbs, dip them back into the egg wash and then coat them in the breadcrumbs again.

4. Prepare the Baking Sheet

Once your baking sheet is ready, arrange the breaded zucchini fries in a single layer, making sure they are not touching each other. Crowding the fries on the baking sheet can cause them to steam rather than crisp, so it’s best to give them plenty of space.

5. Bake the Zucchini Fries

Drizzle the breaded zucchini fries with olive oil or lightly spray them with cooking spray. This will help them crisp up in the oven and develop a golden-brown color.

Bake the zucchini fries in the preheated oven for 20-25 minutes, or until they are golden brown and crispy. About halfway through the baking time, flip the fries over using tongs or a spatula to ensure they cook evenly on both sides.
