For the Salad:

  • 4 cups mixed salad greens (arugula, spinach, or baby greens)
  • 2 ripe peaches, sliced
  • 8 oz burrata cheese
  • 1/4 cup toasted pine nuts or sliced almonds
  • 1/4 cup thinly sliced red onion
  • 1/4 cup fresh basil leaves

For the Dressing:

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  • Prepare the Salad:
    • In a large bowl, combine the mixed greens, peach slices, red onion, and pine nuts or almonds.
    • Gently toss to mix the ingredients.
  • Prepare the Dressing:
    • In a small bowl, whisk together the olive oil, balsamic vinegar, honey (or maple syrup), salt, and pepper until well combined.
  • Assemble the Salad:
    • Arrange the salad mixture on a serving platter or individual plates.
    • Tear the burrata cheese into pieces and place on top of the salad.
    • Drizzle with the prepared dressing.
