Ingredients

Scale

For the Doughnuts

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 2 large eggs
  • ¾ cup milk
  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying

For the Peach Filling

  • 2 cups fresh or canned peaches, chopped
  • ½ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • ½ teaspoon ground cinnamon

For the Crisp Topping

  • ½ cup rolled oats
  • ½ cup brown sugar, packed
  • ¼ cup all-purpose flour
  • ½ teaspoon ground cinnamon
  • ¼ cup unsalted butter, melted

Instructions

I. Make the Peach Filling

  1. Combine Ingredients: In a saucepan, combine the chopped peaches, sugar, cornstarch, lemon juice, and cinnamon.
  2. Cook: Cook over medium heat until the mixture thickens and bubbles, about 5-7 minutes. Remove from heat and let cool.

II. Prepare the Crisp Topping

  1. Mix Topping Ingredients: In a small bowl, combine rolled oats, brown sugar, flour, cinnamon, and melted butter. Mix until crumbly and set aside.

III. Make the Doughnut Batter

  1. Combine Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  2. Mix Wet Ingredients: In another bowl, whisk together eggs, milk, melted butter, and vanilla extract.
  3. Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

IV. Fry the Doughnuts

  1. Heat Oil: In a deep pot or fryer, heat vegetable oil to 350°F (175°C).
  2. Shape Doughnuts: Drop spoonfuls of batter into the hot oil, frying a few at a time. Fry until golden brown on both sides, about 2-3 minutes per side.
  3. Drain: Remove the doughnuts with a slotted spoon and drain on paper towels.

V. Assemble the Doughnuts

  1. Fill Doughnuts: Once the doughnuts are cool enough to handle, use a piping bag or a small knife to make a hole and fill them with the peach mixture.
  2. Top with Crisp: Sprinkle the crisp topping over the filled doughnuts while they are still slightly warm.

VI. Serve

  • Enjoy your Peach Crisp Filled Doughnuts fresh, or dust with powdered sugar for a sweet finishing touch!
