1. Prepare the Ingredients
Start by gathering all of your ingredients. Grate the sharp cheddar cheese if you haven’t already, as freshly grated cheese melts and mixes better than pre-shredded cheese. Allow the cream cheese to soften at room temperature for easier mixing. Drain and chop the pimentos finely, making sure to remove any excess liquid from the jar.
2. Mix the Cheese and Cream Cheese
In a large mixing bowl, combine the freshly grated sharp cheddar cheese and the softened cream cheese. Use a spatula or an electric mixer to mix them together until they are well combined and smooth. The cream cheese will help bind the dip together and give it a rich, creamy texture.
3. Add the Mayonnaise and Seasonings
