- 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1 cup pineapple chunks (fresh or canned)
- 1 cup BBQ sauce (your favorite kind)
- 1 bell pepper (sliced)
- 1 onion (sliced)
- Salt and pepper (to taste)
- Aluminum foil
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare Foil Packets: Cut large pieces of aluminum foil (about 12×12 inches). Place equal amounts of chicken, pineapple, bell pepper, and onion in the center of each piece.
- Add Sauce: Drizzle BBQ sauce over the chicken and vegetables. Season with salt and pepper. Fold the foil over the filling, sealing the edges tightly to form packets.
- Bake: Place the foil packets on a baking sheet and bake for 25-30 minutes, or until the chicken is cooked through and tender.
- Serve: Carefully open the packets (steam will escape!) and serve hot, garnished with fresh herbs if desired.
