Instructions

1. Prepare the Potatoes for Roasting

Start by preheating your oven to 400°F (200°C). While the oven is heating up, wash the potatoes thoroughly to remove any dirt. If using baby potatoes, cut them in half; for larger Yukon gold potatoes, quarter them into bite-sized pieces. The key to roasting potatoes is ensuring they are all cut to a similar size, so they cook evenly.
