Ingredients
For the Rotel Pasta:
- 12 oz. elbow macaroni or any pasta of your choice
- 1 (10 oz) can of Rotel diced tomatoes with green chilies
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 tablespoon butter
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder (optional, for extra heat)
- ¼ teaspoon salt (adjust to taste)
- ¼ teaspoon black pepper
- 1 cup milk (whole milk or 2% works best)
Optional Protein Add-ins:
- 1 lb. cooked ground beef, chicken, or turkey (optional)
Optional Garnishes:
- Fresh cilantro or parsley (for garnish)
- Extra shredded cheese (for topping)
Instructions
1. Cook the Pasta
Start by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package directions, but aim to cook it slightly al dente since it will continue to cook in the sauce. Once the pasta is cooked, drain it and set it aside.
2. Prepare the Sauce
While the pasta is cooking, grab a large skillet or saucepan and melt the butter over medium heat. Once the butter is melted, add the can of Rotel tomatoes (including the juices) to the pan. Stir the tomatoes into the butter, letting them simmer for about 2-3 minutes, allowing the flavors to meld together.
3. Add Dairy and Seasonings
Next, add the milk to the skillet, followed by the garlic powder, onion powder, chili powder (if using), salt, and pepper. Stir everything to combine, then let the mixture heat through for 2-3 minutes.
Once the mixture is heated, reduce the heat to low and stir in the sour cream. This will create a creamy base for your Rotel Pasta sauce. Stir until the sour cream is fully incorporated, giving the sauce a smooth and velvety texture.
4. Add Cheese
Slowly add the shredded cheddar cheese, a little at a time, to the sauce. Stir continuously to ensure that the cheese melts smoothly and doesn’t clump. The cheese will thicken the sauce, creating a rich, cheesy base that will coat the pasta perfectly. Once the cheese is fully melted and the sauce is smooth, remove the skillet from the heat.
5. Combine Pasta and Sauce
Add the drained cooked pasta into the skillet with the cheese sauce. Stir gently to coat the pasta evenly with the creamy sauce. If you find the sauce too thick, you can add a splash more milk to reach your desired consistency.
6. Optional Protein Add-ins
If you’re adding protein, such as ground beef, chicken, or turkey, now is the time to stir it in. Make sure the meat is cooked through and warmed, then mix it thoroughly into the pasta and sauce.
7. Garnish and Serve
Once everything is well combined, serve the Rotel Pasta immediately. For an extra touch, sprinkle some additional shredded cheese on top and let it melt, or garnish with fresh cilantro or parsley for color and flavor.
You can serve this dish as a stand-alone meal, or pair it with a side salad or garlic bread for a complete dinner.
