Ingredients

  • 2 cups rotisserie chicken (shredded)
  • 8 oz pasta (farfalle or your choice)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup cherry tomatoes (halved)
  • 1 cup spinach (fresh)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil (for garnish)

Instructions

  • Cook the Pasta: Boil pasta according to package instructions. Drain and set aside.
  • Sauté Garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  • Make the Sauce: Pour in the heavy cream and chicken broth, bringing to a simmer. Add cherry tomatoes and spinach, cooking until spinach is wilted.
  • Add Chicken: Stir in shredded rotisserie chicken and Parmesan cheese, mixing until the cheese melts and the sauce is creamy.
  • Combine: Add cooked pasta to the skillet, tossing to coat everything evenly. Season with salt and pepper to taste.
  • Serve: Garnish with fresh basil and additional Parmesan cheese, if desired.
