    • 45 ripe peaches, peeled, pitted, and sliced
    • 1/4 cup granulated sugar
    • 1 tablespoon all-purpose flour
    • 1 teaspoon lemon juice
    • 1/2 teaspoon vanilla extract
    • 1/4 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
  • For Assembly:
    • 1 egg, beaten (for egg wash)
    • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  • Prepare the Dough:
    • In a large bowl, combine the flour, granulated sugar, and salt. Add the cold butter pieces and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
    • Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together. Avoid overworking the dough. Form it into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Prepare the Filling:
    • In a medium bowl, toss the peach slices with granulated sugar, flour, lemon juice, vanilla extract, cinnamon, and nutmeg. Set aside to let the flavors meld.
  • Assemble the Galette:
    • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
    • On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to the prepared baking sheet.
    • Spoon the peach mixture onto the center of the dough, leaving a 2-inch border around the edges. Fold the edges of the dough over the peaches, pleating as needed to create a rustic, free-form tart.
  • Finish and Bake:
    • Brush the exposed dough with the beaten egg and sprinkle with coarse sugar.
    • Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  • Serve:
    • Allow the galette to cool slightly before slicing. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
