For the Salami & Cheese Bites:

  • 24 slices of salami (preferably Genoa, pepperoni, or your favorite variety)
  • 12 oz (340g) block of sharp cheddar cheese or your preferred cheese (cut into ½-inch cubes)
  • 24 toothpicks (for easy serving and eating)
  • 1 tablespoon Dijon mustard (optional, for serving)
  • 1 tablespoon olive oil (optional, for drizzling)
  • Fresh herbs (optional, for garnish—such as parsley or thyme)

Instructions

1. Prepare the Cheese

Begin by cutting your cheese into cubes. You can use sharp cheddar, mozzarella, gouda, or any of your favorite cheeses. The cheese should be cut into cubes that are about ½-inch in size, ensuring they’re bite-sized and easy to eat with the salami.

If you’re using a block of cheese, be sure to use a sharp knife to make even cuts. If you prefer a more complex flavor profile, you can mix different types of cheese, such as a combination of cheddar and gouda, for a deliciously creamy and tangy bite.

2. Prepare the Salami

Lay the slices of salami flat on a cutting board. If your salami slices are too large to fold around the cheese, you can cut them in half or into smaller pieces to create the perfect size for wrapping around each cheese cube.

Some people prefer to use a variety of salami types—such as Genoa, pepperoni, or soppressata—depending on the flavor profile they want. For a spicier bite, choose a spicier salami, such as pepperoni. For a milder flavor, go with a classic Genoa or Soppressata.

3. Assemble the Bites

Take a cheese cube and place it at the center of a slice of salami. Gently fold the edges of the salami around the cheese to create a small “pocket” or “wrap” that will hold the cheese inside.

Once the salami is wrapped around the cheese, take a toothpick and insert it through the center to hold everything in place. The toothpick will also make the bites easier to serve and eat.

Continue wrapping the remaining cheese cubes with salami and securing them with toothpicks until you have used up all the ingredients. You should end up with approximately 24 individual bites, depending on the size of your cheese cubes and salami slices.

4. Cook the Salami & Cheese Bites

Preheat your oven to 375°F (190°C). Arrange the salami and cheese bites on a baking sheet lined with parchment paper or a silicone baking mat. Be sure to space them out evenly to ensure they bake uniformly.

Drizzle a small amount of olive oil over the bites if you’d like a crispier texture on the outside, though this step is optional. The salami itself will release some oil during baking, which will naturally crisp up the outside of the bites.

Place the baking sheet in the oven and bake for 10-15 minutes, or until the salami is crispy and the cheese has melted slightly. Keep a close eye on the bites as they bake to prevent overcooking. You want the cheese to melt just enough, but not leak out entirely.

5. Garnish and Serve

Once the bites are out of the oven, allow them to cool for a few minutes before serving. If desired, garnish the bites with fresh herbs like parsley or thyme for an extra burst of flavor and color.

Serve the bites warm with a side of Dijon mustard or your favorite dipping sauce, if desired. The mustard provides a nice tangy contrast to the richness of the salami and cheese.
