Description

Brighten up your dinner with this Salmon with Mango Salsa! The rich, buttery salmon pairs perfectly with a vibrant and fresh mango salsa made with cilantro, red onion, and lime. This tropical-inspired dish is a refreshing, flavorful option that’s perfect for summer nights or when you want something light and healthy.

Ingredients

    • Salmon: 2 salmon fillets (6 oz each), skin-on or skinless

    • Olive Oil: 2 tablespoons extra virgin olive oil

    • Lime Juice: 2 tablespoons fresh lime juice

    • Garlic: 2 cloves garlic, minced

    • Salt: ½ teaspoon (to taste)

    • Black Pepper: ¼ teaspoon freshly ground black pepper (to taste)

For the Mango Salsa:

    • Mango: 1 large ripe mango, peeled and diced

    • Red Onion: ¼ cup red onion, finely diced

    • Cilantro: 2 tablespoons fresh cilantro, chopped

    • Jalapeño: 1 small jalapeño, finely diced (adjust based on your spice preference)

    • Red Bell Pepper: ¼ cup red bell pepper, finely diced

    • Lime Juice: 1 tablespoon fresh lime juice

    • Salt: ¼ teaspoon salt

    • Black Pepper: ¼ teaspoon freshly ground black pepper

Optional Add-ins:

    • Avocado: ½ ripe avocado, diced (for extra creaminess)

    • Cucumber: ¼ cup cucumber, finely diced (for added crunch)

    • Honey: 1 teaspoon honey (for a touch of sweetness in the salsa)

Instructions

1. Prepare the Mango Salsa

  • Begin by making the mango salsa to allow the flavors to meld together. In a medium bowl, combine the diced mango, red onion, cilantro, jalapeño, and red bell pepper. Add the lime juice, salt, and pepper, and gently toss everything together to combine.
  • Taste the salsa and adjust the seasoning if necessary. If you prefer a sweeter salsa, you can add a teaspoon of honey, or if you like more heat, add an extra jalapeño. Optionally, fold in some diced avocado or cucumber for extra creaminess and crunch.
  • Cover the salsa with plastic wrap and set it aside while you prepare the salmon.

2. Cook the Salmon

  • Heat the olive oil in a non-stick skillet or grill pan over medium-high heat. Once the oil is hot, place the salmon fillets in the pan, skin-side down (if using skin-on). Season the salmon with salt, pepper, and the minced garlic.
  • Cook the salmon for 4-5 minutes per side, depending on the thickness of the fillets and your desired level of doneness. The salmon should be golden brown on the outside and flaky on the inside. If you prefer your salmon well-done, you can cook it for an additional 1-2 minutes per side.
  • For an added layer of flavor, squeeze fresh lime juice over the salmon while it cooks. This will brighten up the dish and complement the sweetness of the mango salsa.

3. Assemble the Dish

  • Once the salmon is cooked, transfer the fillets to a serving plate. Spoon a generous amount of the mango salsa over the top of the salmon, allowing the salsa to spill over the sides.
  • Serve the Salmon with Mango Salsa immediately, paired with your choice of side dishes. You can enjoy this dish on its own or with rice, quinoa, a side salad, or roasted vegetables for a complete meal.
