Ingredients

Scale
  • 2 ¾ cups all-purpose flour: The base of our cookies, providing structure and chewiness.
  • 1 tsp baking soda: Helps the cookies rise, making them light and fluffy.
  • ½ tsp salt: Enhances the sweetness and balances the flavors.
  • 1 cup unsalted butter, softened: Adds richness and that melt-in-your-mouth texture.
  • 1 cup granulated sugar: Sweetens the cookies and contributes to their crisp edges.
  • 1 cup brown sugar: Brings a deeper, caramel-like flavor to the cookies.
  • 2 large eggs: Binds everything together and adds moisture.
  • 2 tsp vanilla extract: Adds warmth and depth to the cookie flavor.
  • Food coloring (optional): To create fun, festive colors for the filling.
  • 1 cup slime filling (see recipe below): The star of the show!

Slime Filling Ingredients

  • 1 cup powdered sugar: Provides sweetness and a smooth texture.
  • 2 tbsp milk: Adjusts the consistency of the filling.
  • Food coloring: Choose your favorite spooky shades—green, orange, purple, or even black!

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C). This ensures your cookies bake evenly and turn out perfectly.

Step 2: Prepare Your Baking Sheets

  • Line two baking sheets with parchment paper. This will help prevent sticking and make cleanup a breeze.

Step 3: Whisk Dry Ingredients

  • In a medium bowl, whisk together the flour, baking soda, and salt. Set this aside. It’s important to combine these first to ensure even distribution of the leavening agent.

Step 4: Cream the Butter and Sugars

  • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 3-4 minutes). You can use a hand mixer or stand mixer for this step.
  • Tip: Make sure your butter is softened but not melted for the best texture.

Step 5: Add Eggs and Vanilla

  • Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract. This mixture should be creamy and well combined.

Step 6: Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet mixture. Mix just until combined—don’t overmix, as this can lead to tough cookies.

Step 7: Make the Slime Filling

  • In a separate bowl, mix the powdered sugar, milk, and a few drops of food coloring until smooth. Adjust the consistency by adding more milk if necessary; it should be thick yet pourable.

Step 8: Assemble the Cookies

  • Using a cookie scoop or tablespoon, portion out dough and flatten each piece in your hand. Place about 1 teaspoon of the slime filling in the center and carefully fold the dough around it, rolling it into a ball.
  • Tip: Make sure the filling is completely enclosed to prevent leaks during baking.

Step 9: Bake the Cookies

  • Place the cookies on the prepared baking sheets, leaving about 2 inches of space between each cookie. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked—that’s okay!

Step 10: Cool and Reveal

  • Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. This helps them set without falling apart.
  • Optional: For a spooky touch, you can drizzle some melted chocolate or additional slime filling on top before serving.
