Ingredients

  • 10 oz fresh or dried noodles (egg noodles, lo mein, or rice noodles)
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce (for extra color and depth of flavor)
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground white pepper (optional)
  • Sesame seeds (for garnish, optional)

Instructions

  • Cook the Noodles:
    • If using dried noodles, cook them according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. If using fresh noodles, skip this step.
  • Prepare the Sauce:
    • In a small bowl, whisk together the soy sauce, dark soy sauce, oyster sauce, sugar, and sesame oil. Set aside.
  • Pan-Fry the Noodles:
    • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and white parts of the green onions, sautéing for 30 seconds until fragrant.
    • Add the cooked noodles to the skillet, spreading them out evenly in the pan. Let them fry undisturbed for 2-3 minutes to develop a crispy bottom.
    • Stir the noodles, then pour the soy sauce mixture over them. Toss to coat the noodles evenly in the sauce. Continue to cook for another 2-3 minutes, stirring occasionally.
  • Serve:
    • Remove from heat and sprinkle with the remaining green onion slices and sesame seeds if desired. Serve hot!
