Ingredients

  • 8 oz rice noodles or your favorite type of noodles
  • 2 tablespoons vegetable oil
  • 1 cup snap peas or snow peas, trimmed
  • 1 red bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce (or additional soy sauce for a vegetarian option)
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sriracha or chili paste (adjust to taste)
  • 1 tablespoon lime juice
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped (optional)
  • Crushed peanuts or sesame seeds for garnish (optional)

Instructions

  • Cook the Noodles:
    • Cook the noodles according to the package instructions. Drain and set aside.
  • Prepare the Sauce:
    • In a small bowl, whisk together the soy sauce, fish sauce, hoisin sauce, sriracha, and lime juice. Set aside.
  • Stir-Fry the Vegetables:
    • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the snap peas and bell pepper, and stir-fry for 2-3 minutes until just tender.
    • Add the minced garlic and ginger, and cook for an additional 1 minute until fragrant.
  • Combine Everything:
    • Add the cooked noodles to the skillet with the vegetables. Pour the prepared sauce over the noodles and toss to combine, cooking for an additional 2-3 minutes until everything is heated through and well-coated with the sauce.
  • Garnish and Serve:
    • Remove from heat and stir in the sliced green onions and chopped cilantro if using. Garnish with crushed peanuts or sesame seeds if desired.
    • Serve immediately and enjoy!
