Ingredients

Scale

For the Soup:

  • 2 tablespoons olive oil – For sautéing the vegetables and adding flavor.
  • 1 onion, chopped – A base flavor that adds sweetness and depth.
  • 2 cloves garlic, minced – For that aromatic goodness.
  • 1 teaspoon ground cumin – Adds a warm, earthy flavor.
  • 1 teaspoon ground ginger – For a hint of warmth and spice.
  • 1 teaspoon ground cinnamon – Enhances the autumn flavors.
  • 1/2 teaspoon salt – To taste.
  • 1/4 teaspoon black pepper – Adds a bit of heat.
  • 4 cups pumpkin puree (canned or homemade) – The star of the show! Make sure it’s pure pumpkin and not pumpkin pie filling.
  • 3 cups vegetable or chicken broth – To thin the soup and add more flavor.
  • 1 cup coconut milk or heavy cream – For a creamy, luscious texture.
  • Fresh parsley or pumpkin seeds (for garnish) – Optional, for a pop of color.

For the Spiderweb Topping:

  • 1/2 cup sour cream or Greek yogurt – For creating the spiderweb design.
  • 1 tablespoon milk – To thin the sour cream or yogurt for easier drizzling.

Instructions

1. Sauté the Vegetables

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until softened and translucent.
  • Add the minced garlic and sauté for another minute, until fragrant. This step adds a wonderful aroma that will have everyone excited for soup!

2. Add the Spices

  • Stir in the ground cumin, ginger, cinnamon, salt, and black pepper. Let the spices cook for about 1-2 minutes to release their flavors. Your kitchen will smell heavenly!

3. Incorporate the Pumpkin

  • Add the pumpkin puree to the pot, stirring well to combine with the onion and spices. Cook for about 2-3 minutes, allowing the pumpkin to warm through.

4. Add the Broth

  • Pour in the vegetable or chicken broth, stirring to combine. Bring the mixture to a simmer and let it cook for about 10-15 minutes. This helps the flavors meld together beautifully.

5. Blend the Soup

  • After simmering, use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a blender. Just be sure to allow steam to escape to avoid any hot splatters!

6. Stir in the Cream

  • Once the soup is smooth, stir in the coconut milk or heavy cream. Let it simmer for an additional 5 minutes to warm through and incorporate the creaminess. Taste and adjust seasoning as needed.

7. Prepare the Spiderweb Topping

  • In a small bowl, mix the sour cream or Greek yogurt with the milk to thin it out slightly. You want a consistency that will allow you to drizzle it easily.

8. Create the Spiderweb Design

  • Ladle the hot pumpkin soup into bowls. Using a spoon or a piping bag, drizzle the thinned sour cream in a spiral pattern on top of the soup. Then, use a toothpick or the tip of a knife to create lines radiating outward from the center, resembling a spiderweb. It’s easier than it sounds, and the result is stunning!

9. Serve and Garnish

  • Garnish with fresh parsley or a sprinkle of pumpkin seeds for added crunch and color. Serve the soup hot, and enjoy the cozy flavors!
