For the Chili:

  • 1 lb ground beef (or turkey)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup beef or vegetable broth

For Toppings:

  • Sour cream or Greek yogurt
  • Shredded cheese
  • Black olives (sliced)
  • Tortilla chips or ghost-shaped crackers
  • Chopped green onions
  • Spooky edible decorations (like gummy worms or candy eyes)

Instructions

I. Sauté the Base

  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.

II. Cook the Meat

  1. Add the ground beef (or turkey) to the pot. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if needed.

III. Add the Ingredients

  1. Stir in the chili powder, cumin, paprika, salt, and pepper.
  2. Add the black beans, kidney beans, diced tomatoes, and broth. Stir well to combine.

IV. Simmer

  1. Bring the chili to a boil, then reduce the heat to low. Cover and simmer for 20-30 minutes, stirring occasionally.

V. Serve

  1. Ladle the chili into bowls and add your favorite spooky toppings. Get creative with the presentation!
