Spooky Spaghetti and Cheese Stuffed Meatballs

For the Meatballs:

  • 1 pound ground beef (or turkey)
  • 1 cup breadcrumbs
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup mozzarella cheese (cubed)
  • 1 teaspoon Italian seasoning

For the Spaghetti:

  • 8 ounces spaghetti
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • Fresh basil (for garnish)
  • Black olives (for eyes)

Instructions

For the Meatballs:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together ground beef, breadcrumbs, egg, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  3. Take a small amount of the meat mixture and flatten it in your palm. Place a cube of mozzarella cheese in the center, then mold the meat around the cheese to form a ball. Repeat until all the meat mixture is used.
  4. Place the meatballs on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes until cooked through and golden.

For the Spaghetti:

  1. Cook spaghetti according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add marinara sauce and bring to a simmer.
  3. Toss cooked spaghetti in the sauce until well coated.
  4. Serve spaghetti topped with cheese-stuffed meatballs. Use black olives to create spooky “eyes” on the meatballs if desired.
  5. Garnish with fresh basil for a pop of color.
