- Cream cheese (for a creamy texture)
- Leafy greens (like spinach or arugula)

Instructions
1. Prepare the Sushi Rice
Begin by preparing the sushi rice. Rinse the rice thoroughly under cold water until the water runs clear. This helps remove excess starch and ensures the rice cooks evenly. Once rinsed, cook the rice according to the package instructions. If you have a rice cooker, use that for the best results.
Once the rice is cooked, transfer it to a large bowl and allow it to cool to room temperature. While the rice is cooling, mix together the rice vinegar, sugar, and salt in a small bowl until the sugar and salt are fully dissolved. Gently fold this vinegar mixture into the cooled rice, ensuring the rice is evenly seasoned. This will give the rice the perfect tangy-sweet flavor that complements the other ingredients in your Sushi Sandwich.
2. Prepare the Fillings
While the rice cools, prepare the fillings for your Sushi Sandwich. Slice the avocado into thin pieces, julienne the cucumber and carrot, and slice your chosen protein (whether it’s sushi-grade fish, cooked shrimp, or tofu). Set the fillings aside, ready to assemble your sandwich.
If you’re using optional ingredients like leafy greens, cream cheese, or kimchi, prepare these as well. Having all your fillings ready before assembling makes the process go smoothly and quickly.
3. Assemble the Sushi Sandwich
Now that your rice and fillings are ready, it’s time to assemble the Sushi Sandwich.
Start by placing a sheet of nori, shiny side down, on a flat surface like a cutting board or bamboo mat. If you don’t have a bamboo mat, you can easily assemble the sandwich with just your hands.
Spread about half of the prepared sushi rice evenly over the center of the nori, leaving about 1-2 inches of space on each side. The rice should be spread in a square or rectangular shape, depending on the size of your nori sheet.
Next, layer your fillings on top of the rice. Begin with a few slices of avocado, followed by julienned cucumber, carrot, and your choice of protein. You can also drizzle a little soy sauce or sesame oil over the fillings for added flavor.
If you’re using spicy mayo, teriyaki sauce, or other condiments, drizzle a small amount over the fillings to give the sandwich extra flavor. Be mindful not to overfill the sandwich, as this can make it difficult to wrap and hold together.
4. Fold the Nori to Form the Sandwich
To fold the nori into a sandwich shape, bring the edges of the nori up over the rice and fillings, folding each side toward the center. Make sure to tuck the edges in as you go to secure everything inside. The goal is to create a neat, compact sandwich with the rice and fillings enclosed within the nori.
Once the sides are folded in, gently press down to secure the sandwich, ensuring that the fillings are tightly packed. You can use a bamboo mat to help shape the sandwich, but it’s not essential.
5. Cut and Serve
Once your Sushi Sandwich is fully assembled, use a sharp knife to cut it in half. If you like, you can slice it into smaller portions for a more bite-sized snack. Serve the sandwich immediately, garnished with pickled ginger and a dollop of wasabi on the side if desired.
If you want to make the sandwiches ahead of time, you can wrap them in parchment paper or plastic wrap to keep them fresh. Sushi Sandwiches are best enjoyed the same day they are made, but they can be stored in the refrigerator for a few hours if needed.
