Description

These tender chicken thighs are marinated in a sweet chili sauce, then baked or grilled to perfection. The result is a balance of sweet, savory, and slightly spicy flavors that make this dish a crowd-pleasing favorite.

Ingredients

Scale

For the Chicken Thighs:

  • 4 bone-in, skin-on chicken thighs (you can also use boneless, skinless if you prefer)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (or regular paprika)

For the Sweet Chili Sauce:

  • 1/4 cup sweet chili sauce
  • 2 tablespoons honey
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (optional, for extra heat)
  • 1 tablespoon lime juice (optional, for a fresh tang)

For Garnish:

  • 1 tablespoon sesame seeds (optional)
  • 2 tablespoons chopped fresh cilantro (optional)
  • 2 tablespoons chopped green onions (optional)

Instructions

1. Prepare the Chicken Thighs

To start, make sure your chicken thighs are fully thawed (if frozen). Pat them dry with paper towels to remove any excess moisture, as this will help the skin get crispy during cooking. Season both sides of the chicken thighs with salt, pepper, garlic powder, and paprika. This simple seasoning allows the sweet chili sauce to shine without overpowering the flavor of the chicken itself.

If you prefer to remove the skin, you can do so, but keeping the skin on will give you a crispy, flavorful exterior that contrasts perfectly with the tender chicken inside.

2. Sear the Chicken Thighs

Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken thighs to the skillet, skin-side down. Cook for about 5-7 minutes or until the skin is golden brown and crispy. This searing step is key to developing the rich flavor and texture that make chicken thighs so delicious.

After the skin has browned, flip the chicken over and reduce the heat to medium. Let the chicken cook for another 10-12 minutes, or until the internal temperature reaches 165°F (75°C). If you’re using boneless, skinless thighs, the cooking time will be shorter—about 10-15 minutes in total, depending on the size of the chicken pieces.

3. Make the Sweet Chili Sauce

While the chicken is cooking, prepare the sweet chili sauce. In a small saucepan, combine sweet chili sauce, honey, soy sauce, rice vinegar, minced garlic, grated ginger, and red pepper flakes (if using). Bring the mixture to a simmer over medium heat, stirring occasionally.

Let the sauce simmer for about 3-5 minutes, or until it thickens slightly. If you like a bit of acidity in the sauce, you can add a tablespoon of lime juice to balance out the sweetness. Keep an eye on the sauce to ensure it doesn’t reduce too much or burn.

Once the sauce has thickened and the garlic and ginger have infused, remove it from the heat. The sauce should have a sweet, tangy, and slightly spicy flavor, with a glossy texture.

4. Glaze the Chicken Thighs

Once the chicken thighs are fully cooked, it’s time to glaze them. Brush each chicken thigh generously with the sweet chili sauce, ensuring that it’s evenly coated. If you prefer a thicker layer of glaze, feel free to brush on a second coat.

For an extra caramelized effect, you can place the glazed chicken thighs under a broiler for 2-3 minutes. This will help the sauce set and develop a glossy, sticky finish. Just be sure to watch the chicken carefully to avoid burning.

5. Serve and Garnish

Once the chicken is glazed, transfer it to a serving platter. If desired, sprinkle sesame seeds over the top for a bit of crunch and a nutty flavor. You can also garnish with fresh cilantro and chopped green onions for added color and freshness.

Serve the Sweet Chili Chicken Thighs with your favorite side dishes. Some great options include steamed rice, roasted vegetables, mashed potatoes, or even a fresh salad. The sweet and spicy sauce pairs wonderfully with a variety of sides, making this dish versatile and satisfying.
