Ingredients

Scale

For the Meatballs:

  • 1 lb ground beef, pork, or chicken (or a combination)
  • 1/2 cup breadcrumbs (preferably panko for extra crunch)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1 tablespoon soy sauce
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for frying or greasing the baking pan)

For the Sweet Chili Garlic Sauce:

  • 1/3 cup sweet chili sauce (store-bought or homemade)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon honey (optional for added sweetness)
  • 1 teaspoon sesame oil (optional for an extra layer of flavor)
  • 1/2 teaspoon crushed red pepper flakes (optional for added heat)

For Garnish (Optional):

  • Chopped green onions or cilantro
  • Sesame seeds
  • Lime wedges

Instructions

1. Prepare the Meatball Mixture

Preheat your oven to 375°F (190°C) if you plan to bake the meatballs. Alternatively, you can fry them in a skillet for a crispier outer layer.

In a large mixing bowl, combine the ground meat, breadcrumbs, grated Parmesan cheese, egg, minced garlic, soy sauce, onion powder, salt, and black pepper. Add the fresh parsley if you’re using it for extra flavor and color.

Using your hands or a spoon, mix everything together until just combined. Be careful not to overwork the mixture, as this can result in tough meatballs. The mixture should be sticky and slightly moist.

2. Shape the Meatballs

Take about 1 to 1 ½ tablespoons of the meat mixture and roll it between your hands to form a meatball. Repeat this step with the rest of the mixture, making about 12-16 meatballs, depending on the size you prefer.

If you’re baking the meatballs, place them on a baking sheet lined with parchment paper or a silicone baking mat. If you’re frying them, heat a large skillet with olive oil over medium-high heat.

3. Cook the Meatballs

Option 1: Baking Method

Place the meatballs on the prepared baking sheet, making sure they are spaced apart to allow them to cook evenly. Bake the meatballs in the preheated oven for 20-25 minutes, or until they are golden brown on the outside and cooked through. You can check for doneness by inserting a meat thermometer into the center of a meatball—it should read at least 165°F (74°C).

Option 2: Frying Method

Heat a tablespoon of olive oil in a large skillet over medium heat. Once the oil is hot, add the meatballs in batches, making sure not to overcrowd the pan. Cook the meatballs for 2-3 minutes on each side, or until they are browned and crispy. Once they are fully cooked through, transfer the meatballs to a plate lined with paper towels to absorb any excess oil.

4. Prepare the Sweet Chili Garlic Sauce

While the meatballs are cooking, you can prepare the sauce. In a small saucepan, combine the sweet chili sauce, soy sauce, rice vinegar, minced garlic, honey (if using), and sesame oil (if using). Stir the ingredients together over medium heat.

Allow the sauce to come to a simmer, stirring occasionally. Let it cook for 3-5 minutes, or until the sauce has thickened slightly. Taste the sauce and adjust the seasoning by adding more honey for sweetness or red pepper flakes for more heat, depending on your preference.

5. Coat the Meatballs with Sauce

Once the meatballs are cooked, transfer them to a large mixing bowl. Pour the sweet chili garlic sauce over the meatballs and toss them gently to coat evenly. The sauce will cling to the meatballs, giving them a glossy finish and an irresistible flavor.

6. Garnish and Serve

Transfer the coated meatballs to a serving platter. Garnish with chopped green onions, sesame seeds, and a squeeze of lime juice for an added burst of freshness.

Serve the Sweet Chili Garlic Meatballs hot, with extra lime wedges and dipping sauce on the side if desired. They’re perfect for pairing with steamed rice, a light salad, or as a standalone appetizer.
