  • 1 lb ground beef
  • 1 packet (1 oz) taco seasoning mix
  • 1 cup water
  • 1 head of romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup shredded cheddar cheese
  • 1 avocado, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup sliced black olives (optional)
  • 1 cup crushed tortilla chips
  • 1/2 cup sour cream
  • 1/2 cup salsa or taco sauce
  • Lime wedges for garnish (optional)

Instructions

  • Cook the Beef:
    • In a large skillet, cook the ground beef over medium heat until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
    • Stir in the taco seasoning mix and water. Simmer for 5 minutes, or until the liquid has mostly evaporated and the beef is well-coated with the seasoning. Set aside to cool slightly.
  • Prepare the Salad Base:
    • In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, black beans, corn, and red onion.
  • Assemble the Salad:
    • Add the cooked ground beef to the salad base and toss to combine.
    • Top with shredded cheddar cheese, diced avocado, and sliced black olives if using.
  • Add Crunch:
    • Just before serving, sprinkle the crushed tortilla chips on top for a crunchy texture.
  • Serve:
    • Serve the salad with a dollop of sour cream and a drizzle of salsa or taco sauce. Garnish with lime wedges if desired.
