- 1 lb ground beef
- 1 packet (1 oz) taco seasoning mix
- 1 cup water
- 1 head of romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup shredded cheddar cheese
- 1 avocado, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup sliced black olives (optional)
- 1 cup crushed tortilla chips
- 1/2 cup sour cream
- 1/2 cup salsa or taco sauce
- Lime wedges for garnish (optional)
Instructions
- Cook the Beef:
- In a large skillet, cook the ground beef over medium heat until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
- Stir in the taco seasoning mix and water. Simmer for 5 minutes, or until the liquid has mostly evaporated and the beef is well-coated with the seasoning. Set aside to cool slightly.
- Prepare the Salad Base:
- In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, black beans, corn, and red onion.
- Assemble the Salad:
- Add the cooked ground beef to the salad base and toss to combine.
- Top with shredded cheddar cheese, diced avocado, and sliced black olives if using.
- Add Crunch:
- Just before serving, sprinkle the crushed tortilla chips on top for a crunchy texture.
- Serve:
- Serve the salad with a dollop of sour cream and a drizzle of salsa or taco sauce. Garnish with lime wedges if desired.
