  • 2 cups all-purpose flour

  • ½ teaspoon baking powder

  • ½ teaspoon salt

  • ½ cup mascarpone cheese, softened

  • ¼ cup cocoa powder (for dusting)


Instructions

1. Prepare the Dough

Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat to ensure the cookies don’t stick during baking.

In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer. Beat on medium speed for about 2-3 minutes, or until the mixture is light and fluffy. This step incorporates air into the dough, helping the cookies become soft and chewy.

In a small bowl, dissolve the espresso powder or instant coffee powder in hot water. Stir until completely dissolved. Add this coffee mixture to the creamed butter and sugar, followed by the eggs and vanilla extract. Mix everything together until fully incorporated.

2. Combine the Dry Ingredients

In another bowl, whisk together the all-purpose flour, baking powder, and salt. The baking powder helps the cookies rise slightly, creating a light and tender texture, while the salt enhances the flavor and balances the sweetness.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix the dough, as this could result in dense cookies. The dough should be soft, slightly sticky, and easy to scoop.

3. Add the Mascarpone Cheese

Gently fold in the mascarpone cheese. The mascarpone gives these cookies their signature creaminess, mimicking the richness of traditional tiramisu. It will also add a slight tang, balancing the sweetness and coffee flavor.

4. Scoop the Dough

Using a cookie scoop or a spoon, scoop tablespoon-sized portions of dough and place them on the prepared baking sheet. Leave about 2 inches of space between each cookie to allow for spreading during baking. If you prefer larger or smaller cookies, simply adjust the size of the dough balls, but keep in mind that the baking time may vary slightly.

5. Bake the Cookies

7. Dust with Cocoa Powder

Once the cookies have cooled, dust them with a light coating of cocoa powder. This final touch adds the finishing tiramisu-inspired flair, mimicking the traditional dusting of cocoa on the dessert. Use a fine-mesh sieve or sifter to ensure the cocoa powder is evenly distributed for a polished look.
