Description

A luxurious dessert that layers three types of chocolate—dark, milk, and white—into a creamy cheesecake filling on a decadent chocolate crust. These mini cheesecakes are a chocolate lover’s dream come true.

Ingredients

Scale

For the Crust:

  • 1 ½ cups chocolate graham cracker crumbs (or regular graham crackers crushed with cocoa powder)
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 6 oz dark chocolate, melted
  • 6 oz milk chocolate, melted
  • 6 oz white chocolate, melted

For the Ganache Topping:

  • 4 oz dark chocolate, chopped
  • ½ cup heavy cream

Optional Garnishes:

  • Whipped cream
  • Chocolate shavings or curls
  • Fresh berries

Instructions

1. Prepare the Crust

Start by preparing the chocolate crust for the cheesecakes. In a medium mixing bowl, combine the chocolate graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture is well combined and the crumbs are evenly coated with butter.

Next, divide the crumb mixture evenly among the bottom of 12 individual cheesecake pans or muffin tins. Press the crumbs down firmly using the back of a spoon or your fingers to create a compact, even layer. The crust will form the base for your cheesecake, so make sure it’s well-pressed to avoid any gaps when baking.

Once the crust is prepared, set the pans aside to make the cheesecake filling.

2. Make the Cheesecake Filling

To prepare the filling, start by beating the softened cream cheese in a large mixing bowl. Use an electric mixer or a stand mixer to beat the cream cheese until it’s smooth and creamy. This will ensure that the texture of your cheesecake filling is light and fluffy.

Once the cream cheese is smooth, add the granulated sugar and beat again until fully incorporated. This will sweeten the filling and help achieve the creamy consistency.

Add the eggs one at a time, beating well after each addition. This ensures that each egg is fully incorporated into the mixture and helps the filling hold together as it bakes.

Once the eggs are mixed in, add the vanilla extract and mix until well combined.

3. Incorporate the Chocolate

Now it’s time to add the chocolate. Begin with the dark chocolate. Melt it using a microwave or double boiler method, making sure it’s completely smooth and free of lumps. Let the melted dark chocolate cool slightly before folding it into the cream cheese mixture.

Repeat the same process for the milk chocolate and white chocolate. Melt each type of chocolate separately, and then allow them to cool before folding them into the filling one at a time. This will create the three layers of chocolate in your cheesecake filling, resulting in a rich and decadent chocolate flavor.

Be careful not to overmix the filling. Gently fold the chocolate into the mixture to avoid deflating the batter.

4. Assemble the Cheesecakes

Once the filling is ready, carefully spoon it into the prepared crusts, dividing it evenly among the 12 pans. Fill each pan almost to the top, as the cheesecakes will not rise significantly during baking.

Smooth the tops of the cheesecakes with a spatula to ensure an even surface. This will help create a polished look for the finished cheesecakes.

5. Bake the Cheesecakes

Preheat your oven to 325°F (165°C). Place the cheesecake pans on a baking sheet to catch any potential drips, then bake the cheesecakes for 20-25 minutes, or until the edges are set and the centers are just slightly jiggly. You can test for doneness by gently tapping the side of the pan—if the filling moves slightly in the center, it’s done.

Be careful not to overbake the cheesecakes. Overbaking can cause the texture to become dry and crumbly. The cheesecakes will continue to set as they cool.

6. Cool and Chill the Cheesecakes

Once the cheesecakes are finished baking, remove them from the oven and let them cool in the pans for about 10 minutes. After this initial cooling period, transfer the cheesecakes to the refrigerator and chill for at least 2 hours, or until they are fully set. This step is essential for achieving the perfect creamy texture.

7. Prepare the Ganache Topping

While the cheesecakes are chilling, prepare the chocolate ganache topping. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from the heat and add the chopped dark chocolate. Let the mixture sit for a few minutes to allow the chocolate to melt.

After a few minutes, stir the ganache until it’s smooth and glossy. If the ganache is too thick, you can add a little more heavy cream to reach your desired consistency.

Let the ganache cool slightly before drizzling it over the chilled cheesecakes. This will create a glossy, rich topping that complements the creamy filling perfectly.

8. Garnish and Serve

Once the ganache has set on top of the cheesecakes, you can garnish them with whipped cream, chocolate shavings, or fresh berries for an extra touch of elegance. These garnishes will add texture and flavor, making your Triple Chocolate Cheesecakes even more irresistible.

Serve the cheesecakes chilled, and enjoy the decadent layers of chocolate in every bite!
