A vibrant salad filled with seasonal winter fruits like apples, pears, pomegranate seeds, and citrus. Tossed with a honey-lime dressing, this salad is a refreshing and healthy addition to any meal, offering a sweet, crisp bite of winter.
Ingredients
- Oranges: 2 large oranges, peeled and cut into segments
- Pomegranate Seeds: ½ cup pomegranate seeds (from 1 pomegranate)
- Pears: 2 ripe pears, cored and sliced
- Apples: 1 large apple, cored and chopped (preferably a firm variety like Gala or Fuji)
- Grapes: 1 cup seedless grapes, halved
- Kiwi: 2 ripe kiwis, peeled and sliced
- Cranberries: ½ cup fresh or frozen cranberries (optional)
For the Dressing:
- Honey: 1 tablespoon honey (or maple syrup for a vegan version)
- Lime Juice: 1 tablespoon fresh lime juice
- Fresh Mint: 1 tablespoon fresh mint, chopped
- Vanilla Extract: ½ teaspoon vanilla extract (optional)
- Pinch of Salt: A small pinch of sea salt (optional)
Instructions
Prepare the Fruit
- Start by peeling and segmenting the oranges. Cut off the peel and pith, then cut the oranges into individual segments, removing any seeds. If you’re having trouble segmenting, you can cut the oranges into wedges instead.
- For the pomegranate, carefully cut it in half, then use your fingers to release the seeds (also known as arils). You can also tap the back of the pomegranate with a spoon to help loosen the seeds. Once you have the seeds, set them aside.
- Core and slice the pears into thin wedges or bite-sized pieces. If you prefer, you can peel them, but the skin adds extra fiber and color.
- Core and chop the apple into bite-sized pieces. It’s best to leave the skin on for added texture and nutrients.
- Halve the grapes. If using larger grapes, you can quarter them to make them more manageable in the salad.
- Peel the kiwis and slice them into thin rounds or half-moons, depending on your preference.
- If you’re using cranberries, rinse them well. If using frozen cranberries, allow them to thaw for a few minutes before adding to the salad.
Make the Dressing
- In a small bowl, whisk together 1 tablespoon of honey, 1 tablespoon of fresh lime juice, and ½ teaspoon of vanilla extract (if using). The honey adds a subtle sweetness, while the lime juice provides a refreshing tang.
- Add the fresh mint and a pinch of salt (optional) to the dressing. The mint adds a lovely aromatic freshness that complements the fruit perfectly. Taste the dressing and adjust the sweetness or acidity to your liking by adding more honey or lime juice.
Assemble the Salad
- In a large mixing bowl, combine all of the prepared fruits: oranges, pomegranate seeds, pears, apples, grapes, and kiwis. If you’re using cranberries, add them to the mix as well.
- Gently toss the fruits together to combine, taking care not to break up the delicate pieces of fruit.
Add the Dressing
- Drizzle the prepared dressing over the salad, then toss gently to coat all of the fruit with the dressing. The dressing should lightly coat the fruit without overpowering it.
Serve Immediately
- Serve the Winter Fruit Salad immediately for the best texture and freshness. If desired, garnish with additional fresh mint leaves or a sprinkle of pomegranate seeds for added color and crunch.
