Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract

For the Brain Frosting:

  • 1 cup unsalted butter, room temperature
  • 4 cups powdered sugar
  • 23 tablespoons milk or heavy cream
  • 1 teaspoon vanilla extract
  • Red and pink food coloring

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • Make the Cupcake Batter:
    • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • In another bowl, mix the oil, eggs, buttermilk, and vanilla extract until well combined.
    • Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  • Bake the Cupcakes:
    • Fill each cupcake liner about 2/3 full with batter.
    • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cupcakes to cool completely on a wire rack before frosting.
  • Prepare the Brain Frosting:
    • In a large bowl, beat the butter with an electric mixer until creamy.
    • Gradually add the powdered sugar, mixing well after each addition.
    • Add the milk (or cream) and vanilla extract and beat until smooth and fluffy.
    • Divide the frosting into two bowls. Tint one bowl with red food coloring and the other with pink food coloring, adjusting until you get a desired brain-like color.
  • Frost the Cupcakes:
    • Fit a piping bag with a round tip and fill it with the red and pink frosting.
    • Starting from the center of each cupcake, pipe the frosting in a spiral pattern, creating a brain-like effect. Alternate between the red and pink frosting to mimic the appearance of a brain.
    • Use a toothpick or a small spatula to refine the brain texture, adding more details if desired.
  • Add Decorations:
    • If using, place candy eyeballs or other spooky decorations on top of the frosting.
